Ingredients
1 smoked gammon
Soak in water for 24 hours to draw out excess salt
2 carrots - peeled
2 onions - peeled
Some parsley
Bay leaves (1 or 2 will do)
A few pepper corns
75 grams butter
75 grams brown sugar
A good glug of honey
Instructions
Slice the carrots and onions
Put all the ingredients (and the gammon) into one big pot
Top the pot up with water
Cook for 2 and a half hours
Slice off the top skin of the gammon
Score the fatty skin underneath
Place butter, sugar and honey into a pan
Cook and let boil for a minute or two
Brush the top of the gammon with 1/2 the glaze
Bake in oven for 15 minutes at 180c
Paint a second coat of glaze over the first
Bake in oven for 10 minutes at 180c
Drizzle the rest of the glaze over the gammon
Serve hot - or cold.
