Healthy Chunky
Chicken Vegetable Noodle Soup

Ingredients

Fresh mixed vegetables- chopped
- We used a store bought bag of mixed vegetables - pre-chopped and ready to use.
1 cup of milk
Chicken stock dissolved in .5l water
1 cup of flour
Butter (+/- 50gms)
Pre-cooked chicken
- We pre-cooked 2 chicken quarters in an air fryer for 10 minutes or so
1 pack 2-minute noodles
All purpose seasoning
Olive oil

Instructions

Add a drizzle of olive oil and pre-heat pot
Add butter to pot
Add vegetables to pot
Cook vegetables for 10-15 minutes
Take chicken meat off the bone and lightly chop
Once veggies are cooked add a little bit of flour
Cook a bit more
Add chicken stock and chicken
Bring to boil
Season to taste
Add milk
Bring to boil
Once boiling nicely add the 2-minute noodles
Cook for 2-3 minutes - stir them all in
Plate and serve hot
