Ingredients
Avocado Oil
Mushrooms
Cooked lentils (pre-boiled for 30 minutes)
Fresh baby spinach
Some hot sauce of your choice
Low fat feta cheese
Baby tomatoes
Balsamic vinegar
Instructions
Chop and fry mushrooms in avocado oil
Add lentils
Chop up baby spinach and add to the pan
Add the hot sauce
Cook for a few minutes
Serve on toasted wholewheat bread
Garnish with feta cheese and baby tomatoes
Drizzle with olive oil and balsamic vinegar
