Avocado
Spring Rolls

Ingredients

Some rice paper - we have used two sheets
1 cup of cooked fluffy sushi rice
Some sriracha mayo
Half an avocado (a good one)
A quarter mango (a juicy one)
Sesame seeds
Mint & basil
A generous dollop of olive oil
Panko crumbs
Flour
Burger rolls
Burger toppings of choice - Tomato sauce, lettuce, pickled onion, vegannaise etc.

Instructions

Soak your rice paper in water for 2 minutes
Cut, peel & slice up your mango & avocado
Lay rice paper out flat
Put some sushi rice onto it

Add some sesame seeds
Add sriracha mayo
Put your avo and mango on top
Layer on some mint & basil
Wrap and roll
Keep it tight and tidy
Cut the rolls in half
Drizzle with some hot sauce
Garnish with some sesame and mint
Place on plates and serve
