Fire Cracker
Vegan Burgers

Ingredients

A cup or so of chickpeas
A cup or so of corn
Some freshly chopped coriander
A little bit of lemon zest
A little bit of cumin (a pinch or two)
Salt & Pepper
Chili according to your taste
A generous dollop of olive oil
Panko crumbs
Flour
Burger rolls
Burger toppings of choice - Tomato sauce, lettuce, pickled onion, vegannaise etc.

Instructions

Put the following ingredients into a bowl:
- Chick peas
- Corn
- Coriander
- Lemon Zest
- Cumin
- Salt and pepper
- Chili
- Olive Oil
Mix them all up with a hand held blender
Don't mix too much - keep the texture
Add the panko crumbs to bind the mixture
Mix it all up
Add a bit of flour
Work mixture through until you feel the patty can be shaped
Shape your patties using a patty mould
Refrigerate the patties for 10 minutes
Dust patties in flour and grill them until they are golden
Toast your burger rolls
Assemble the burges with toppings of choice
