Ingredients
1 cubed sweet potato
Some chopped fresh garlic cloves
A sprig of rosemary
Salt & Pepper
Honey
Olive oil
Chopped herbs
Parmesan cheese
Instructions
Wrap it all up in foil and baking paper
This includes your:
- Cubed sweet potato
- Garlic
- Olive oil
- Honey
- Salt & Pepper and;
- The sprig of rosemary
Roast for approx. 45 minutes at 180c or 356f
Place the cooked sweet potato in a bowl
Gently mash it all up until all lumps are gone
You must have a rich and smooth consistency
Else the kids complain it's lumpy
Drizzle with honey
Garnish with mixed herbs and parmesan cheese
Serve as a side dish with a meat of your choice or...
For the healthy ones out there...
It is also delicious to eat as a main meal
