Easy Thai Meatballs

Ingredients

About 500 grams of ground beef (or mince meat)
A bit of salt & pepper
Some good quality Thai paste
Some coconut milk - a can or so - get it from the coconut shop
Half a bunch of chopped up coriander
Some sweet chili sauce
Soya sauce - the best you can buy
Spring onions and some roasted sesame seeds for garnish
Some freshly cooked fluffy white rice

Instructions

Season your ground beef with a bit of salt & pepper
Add in a teaspoon or so of Thai paste
Give it a good mix around to spread the flavour
Roll your ground beef into bite sized balls
Pre-heat pan with a bit of olive oil
Cook meatballs until brown on all sides - takes about 5 minutes or so
Take the meatballs out of the pan
Fry up a tablespoon or so of the Thai paste in a bit of olive oil
Add in the meatballs & cook them for a minute - coat them in the paste
In with the can of coconut milk
Add some sweet chili sauce
In with the soya sauce
In with the chopped coriander
Let the meatballs cook in the sauce for 2-3 minutes
Heat up the rice
Plate your meatballs on top of the rice
Be generous with the sauce
Top with spring onions and toasted sesame seeds
