BBQ Pork Rib Stir Fry

Ingredients

Portion of pre-cooked pork belly ribs in sticky sauce
Half a red onion - sliced
150 grams quartered button mushrooms
Juicy tender blanched baby peas
2 cloves of chopped garlic
Olive oil
Butter
Soya sauce

Instructions

Cook your pre-cooked ribs in the oven at 180c for 15 minutes
Save the sticky sauce
Cool for 10 minutes
Debone the ribs
Heat your wok to hot
Add oil
Add and cook onions until they get a nice colour
Place cooked onions in a bowl for later
Add oil and mushrooms to wok and cook
Add some salt and pepper to mushrooms
Add more oil and butter
Cook for 5 minutes until golden
Add garlic to mushrooms and cook to release flavour
Put onions back into wok
Add peas to wok as well
Add in the sticky pork belly
Stir fry for about 3-4 minutes
Add the sauce from the pork belly ribs
Add some soya sauce (a good one)
Cook for a few minutes
Serve on a bed of rice and garnish with chives
